Super Simple Recipes for Fuckin' Busy Mom's

Broke Bitch Ramen

One package of any ramen noodle per person ( I used Mr. Noodles; cause I be a broke bitch)

One package of chicken thighs

Whatever veggies you have in your fridge or freezer ( I used carrots to flavour my stock, and frozen veggies for some ribbiness)

Water to cover everything

Eggs (optional)

Soy sauce (optional)

1. Fill a big ass pot with water and your noodle seasoning.

2. Chuck in your chicken thighs (or whatever chicken pieces you have)

3. Chuck in any veggies for flavour (onions, potatoes, carrots)

4. Simmer that bitch on medium; the longer, the better, until the chicken falls off the bone.

5. Once chicken is thoroughly cooked, remove from broth and remove all of the meat. Discard the bones and skin or save and freeze for soup. Add the meat back to the pot.

6. Add whatever veggies you like in your ramen (I used a frozen veggie mix), add your eggs at this point if you're adding them and set a timer for your desired doneness. I cooked mine for 8 minutes and I wanted them to be a little more jammy in the middle.

7. Season to taste with soy sauce or any other seasonings you like.

8. Add your ramen noodles for the last 1.5-2 mins of cooking.

9. Remove from heat  and serve.

Sourdough Discard Breading (Excellent on fish or chicken)

Anyone with sourdough, knows that discard is a part of the process. I try my best to let nothing go to waste, and I've gotten pretty good at it!

1. Pour your discard into a bowl, add flour and water as needed to make as much batter as you require.

2. Season how ever the fuck you want; I like adding cumin, thyme, salt, pepper and chicken bouillon.

3. Add your protein to the batter and mix around until everything is evenly coated.

4. For extra crunch, I like to toss my battered protein into a boxed stuffing mix (it adds flavour, texture and is cheap!)

5. Preheat a pan on medium heat, add whatever oil you like to cook with so it coats the bottom and wait a few minutes.

6. Sprinkle some flour into the oil, if it sizzles, it's ready to go!

7.
Cook your protein for 4-5 minutes per side.

8. Place on paper towel to drain the extra oil off and enjoy!
